Here’s a nice, quick little recipe that I love to whip up for an easy breakfast. The kids love it and so do I and the best part is that you know exactly what is in this homemade muesli. So many store bought muesli’s contact excessive amounts of sugar – even the ‘natural ones’ that are filled with fruit. It also works out to be a whole lot more affordable to make your own. Once you have purchased the ingredients – which can always be done in bulk at your local health food store.

Ingredients

1/2 to 1 cup of Rolled oats

Coconut flakes

LSA (linseed, sunflower and almond) ground or chopped, as you desire

Pepitas (pumpkin seeds)

Chopped macadamias and cashews

Sultanas

 

Method

Basically the oats make up around 60-70% of the ingredients total, and the other ingredients are 30-40%, ratios dependent upon which ingredients are your favourite

I add a Pinch of cinnamon, then combine all in a bowl and add almond Milk (can be any type of milk, such as oat or rice, or even orange juice) and soak overnight in the fridge, covered.

In the morning you may wish to add some more milk and a freshly chopped apple, for extra texture, as I do.

For a coeliac friendly / gluten free version you can substitute the oats for brown rice flakes, puffed amaranth or buckwheat or stick to mixed activated nuts.

I love the fact that you can make this recipe your own. Add the ingredients that you love to make it a brekky that you can’t wait to eat.
